Kadayif, also known as "shredded phyllo dough," is a delicate, thin-strand pastry made from wheat. It resembles fine noodles or vermicelli and has a light, airy texture. Traditionally used in various Middle Eastern and Mediterranean desserts, Kataifi is versatile and can be layered with nuts, cheese, pistachio, or sweet fillings. It absorbs flavors well and becomes wonderfully crispy when baked or fried, making it a favorite base for dishes like kadayıf dessert, where it’s soaked in syrup for added sweetness. Kadayif Dessert
Ingredients:
1 cup butter (about 250g)
1 cup walnuts or pistachios, chopped
For the Syrup:
6 cups sugar
4 cups water
A few drops of lemon juice
Instructions:
Make the Syrup:
In a pot, combine the sugar and water. Add a few drops of lemon juice.
Boil it, then let it simmer until it thickens slightly. Set aside to cool.
Prepare the Kadayif:
Preheat your oven to 400°F (200°C).
In a large bowl, spread out the kadayif (shredded phyllo dough).
Melt the margarine and pour it over the kadayif, making sure to coat it evenly. Mix well, ensuring there are no dry spots.
Layer the Ingredients:
Divide the oiled kadayif into two equal portions.
Spread one portion evenly in a greased baking tray.
Sprinkle the chopped walnuts or pistachios evenly over the first layer.
Top with the remaining kadayif, pressing it down gently to compact.
Bake:
Bake in the preheated oven for 20-25 minutes, or until golden brown.
Add the Syrup:
Once baked, remove from the oven and immediately pour the warm syrup over the kadayif.
Cover with a lid or another tray and let it sit for at least 1 hour before serving.
